The Belted Cow bistro Story: Caitlin Bilodeau and John Delpha, the proprietors of the Belted Cow bistro, arrived in Vermont armed with extensive experience in business and a love for great, local food. NEW! Tuesday is BBQ night. Check out our new pub menu. John received a business degree from Bryant College in Rhode Island. He attended Johnson and Wales University in Providence and received a degree in Culinary Arts. His culinary career began in Providence at Al Forno restaurant. He has spent the last 18 years at the helm of some of Boston’s finest kitchens, including executive chef at La Campania, Sorellina, Harvest and Mistral. He is also a two-time category champion at the Jack Daniels World Barbeque Championship competition, receiving top awards in the Chef’s Choice event in 2006 and 2008 and 2006 “I Know Jack About Grilling” champion. Caitlin graduated from Columbia University in New York with a degree in English Literature. She has numerous prestigious experiences, including US Olympic fencer, head of human resources for a national retailer and world-traveling mom. Together, they have envisioned a dining experience that combines a warm and lively atmosphere with passionately cooked food.
